Cut the corn off the cob.<\/li>\n\n\n\n<li>In a pot, combine the milk, corn, cayenne pepper, cinnamon, honey, and a few pieces of the husk. Bring to a boil.<\/li>\n\n\n\n<li>Turn off the heat, cover, and let steep for about 30 minutes.<\/li>\n\n\n\n<li>Remove the husk and discard.<\/li>\n\n\n\n<li>Blend the mixture until smooth. Strain and reserve the liquid.<\/li>\n\n\n\n<li>Weigh the liquid out and adjust it to 210g with whole milk if needed.<\/li>\n\n\n\n<li>Keep chilled until needed.<\/li>\n<\/ol>\n\n\n\n<p>Part 2: Roasted Sweet Corn Hot Cocoa<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul>\n<li>210g Roasted Sweet Corn Milk<\/li>\n\n\n\n<li>55g deZaan Hot Cocoa Mix<\/li>\n<\/ul>\n\n\n\n<p>Method<\/p>\n\n\n\n<ol start=\"1\">\n<li>Heat the milk to 65\u00b0C\/149\u00b0F.<\/li>\n\n\n\n<li>Blend in the hot cocoa mix until smooth.<\/li>\n<\/ol>\n\n\n\n<p>Part 3: Salted Caramel<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul>\n<li>200g Granulated Sugar<\/li>\n\n\n\n<li>200g Heavy Cream<\/li>\n\n\n\n<li>4g Sea Salt<\/li>\n\n\n\n<li>6g Vanilla Paste<\/li>\n<\/ul>\n\n\n\n<p>Method<\/p>\n\n\n\n<ol start=\"1\">\n<li>Caramelize the sugar to a dark amber.<\/li>\n\n\n\n<li>Whisk in the heavy cream, salt, and vanilla paste<\/li>\n\n\n\n<li>Strain and cool.<\/li>\n<\/ol>\n\n\n\n<p>Part 4: Vanilla Whipped Cream<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul>\n<li>454g Heavy Cream<\/li>\n\n\n\n<li>9g Vanilla Bean Paste<\/li>\n\n\n\n<li>40g Granulated Sugar<\/li>\n<\/ul>\n\n\n\n<p>Method<\/p>\n\n\n\n<ol start=\"1\">\n<li>In the bowl of a stand mixer, whisk the heavy cream to soft peaks.<\/li>\n\n\n\n<li>Add in the vanilla paste and gradually add in the granulated sugar.<\/li>\n\n\n\n<li>Whisk to medium peaks.<\/li>\n<\/ol>\n\n\n\n<p>Part 5: Caramel Popcorn<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul>\n<li>850g Granulated Sugar<\/li>\n\n\n\n<li>250g Butter<\/li>\n\n\n\n<li>6g Salt<\/li>\n\n\n\n<li>10g Baking Soda<\/li>\n\n\n\n<li>4g Vanilla Paste<\/li>\n\n\n\n<li>114g Popped Corn<\/li>\n<\/ul>\n\n\n\n<p>Method<\/p>\n\n\n\n<ol start=\"1\">\n<li>Pop the popcorn ahead of time and reserve 114 g of the popped corn for one batch. Discard any unpopped kernels.<\/li>\n\n\n\n<li>In a large pot, caramelize the sugar.<\/li>\n\n\n\n<li>Once the sugar is fully cooked, stir in the butter, salt, vanilla paste, and baking soda quickly and carefully.<\/li>\n\n\n\n<li>Once well combined, add in the popcorn.<\/li>\n\n\n\n<li>Toss to evenly coat. Spread into an even single layer on a sheet tray lined with a silicone mat.<\/li>\n\n\n\n<li>Allow to cool and immediately store in an air-tight container with a silica packet to keep it dry.<\/li>\n<\/ol>\n\n\n\n<p>Part 6: Assembly<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul>\n<li>Salted Caramel<\/li>\n\n\n\n<li>Roasted Sweet Corn Hot Cocoa<\/li>\n\n\n\n<li>Vanilla Whipped Cream<\/li>\n\n\n\n<li>Caramel Popcorn<\/li>\n<\/ul>\n\n\n\n<p>Method<\/p>\n\n\n\n<ol start=\"1\">\n<li>Drizzle the salted caramel on the interior of the serving glass.<\/li>\n\n\n\n<li>Pour in the hot cocoa.<\/li>\n\n\n\n<li>Top with a dollop of whipped cream and a few pieces of caramel popcorn.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>By chef Talia Profet Roasted sweet corn hot cocoa with caramel and a hint of spice, served with caramel popcorn.
